What did you have to eat today?

These threads are always interesting... esp if you're like me and you're always on the lookout for new things to try!

This is what I had today:

It's actually my own recipe and what's shocking is it tastes nice too!

Chicken and Peas (with onions, garlic) served on a bed of raw spinach. (Can also be served with cous cous either with or instead of the spinach.) Unlike how it may look ('salady') it's actually very filling!

Re: What did you have to eat today?

I originally had it with barley cous cous - but saw someone else have something else on a bed of raw spinach and thought that it'd actually be worth trying... I even did a bowl of cous cous 'just in case' I didn't like it... I gave that to the dog instead

You basically fry your onions and peas, then add s&p&garlic and then add chicken pieces, and then some turmeric. Season to taste and then turn off heat and fold your spinach into it - add some olive oil if you like. Serve. Enjoy

Actually, fresh, raw spinach is quite good. Tastes far better than Iceberg Lettuce. I use it on my sandwiches all the time.

Re: What did you have to eat today?

It's surprisingly filling isn't it Kaz? I don't like light 'salady' type meals and this is definitely not one of those!

Re: What did you have to eat today?

Well, it definitely adds to the bulk of the sandwich...

Roasted vegetable couscous (barley couscous) - I tried to replicate M&S's ready made version, but without the sugar they add to theirs. My version is much healthier
